Elaine\'s Restaurant in Nob Hill Albuquerque is a different kind of Restaurant
\"I\'m not saying there aren’t other people here who do great restaurants,\" Paternoster says, “but this is different.\"Andrew Gorski, a graduate of the Culinary Institute of America, moved from Ohio to take the job as executive chef. He describes the Elaine’s food philosophy as \"modernistic plays on classical dishes\" with an emphasis on preparation techniques. Ingredients are sourced locally when possible, he says.Among the entree choices are a coho salmon with green lentils, olive, apricot and syrah ($29) and a bass dish featuring crackling, housemade brown butter creme, red currant sauce and fennel ($31).Appetizers include duck confit and Hudson Valley foie gras.As for the interior design – a mix of dark woods, neutral hues and an eclectic array of art that hangs in a collagelike fashion on the west wall – Blanco says it’s an homage to her family\'s metropolitan roots.\"My whole family is New Yorkers, so we kind of wanted a city vibe,\" she says.A small bar is situated at the back of the dining room – Elaine\'s serves beer and wine – as is an eight-seat chef\'s table illuminated by a chandelier.The Elaine\'s experience should be intimate and special, Paternoster says.\"We want this to be worth the price of admission. … We\'re not trying to stuff 150-200 people in here every night. We\'re trying to do a certain number of covers as close to great as we can,\" he says.Elaine’s is also something of a nod to Paternoster\'s appreciation for Blanco – who he\'s known since his childhood in El Paso – and Mendoza, who he sees as the next generation of his business.Paternoster and Mendoza also are working on an Argentinean-themed restaurant for the former Brasserie La Provence spot in Nob Hill.Elaine\'s is open from 5-10:30 p.m. Tuesday through Saturday.
